Mike Bite's Food Co. began June 2020 in the midst of global isolation during the beginning of the pandemic. Mike had been a Sous Chef at Malinche, and when the pandemic hit he was one of the first to be laid off. Like most of us, he found something to keep his mind busy. Thus Papi Chulo was born. Cecilia joined on less than a month after the creation of the company, feeling it was a natural pivot for her cooking career that had also been taken by the pandemic.
